Pasta With Chicken and Bacon

INGREDIENTS

⁃ pasta (Cavatappi)

⁃ Chicken fillet (Chopped)

⁃ Diced Bacon

⁃ Sliced Green,red,yellow pepper

⁃ Cream

⁃ Diced cheese

⁃ Mushroom

⁃ Parsley

⁃ Mixed herbs

⁃ Origanum

⁃ Salt

⁃ Olive oil

PREPARATION

• Cook the pasta according to the packet instructions(remember to wash it)

• In a frying pan, heat the oil and add the chicken and pepper and cook until golden brown and cooked through.

• Add the mushrooms, garlic and bacon cook for 5minutes.

• Lower the heat, stir in the cream and Cheese warm through (do not boil) and season to taste with salt, parsley and mixed herbs and dried origanum

• Add the drained, cooked pasta and stir.

• Dish into plate and enjoy warm Pasta

INGREDIENTS

⁃ two cups of spekko rice

⁃ Spice for rice

⁃ Parsley

⁃ Diced Green, red and yellow pepper

⁃ Mushrooms (chopped)

⁃ Origanum

⁃ BBQ spice

⁃ Brown sugar

⁃ Onions

⁃ Lemon

PREPARATION

Boil the rice under normal heat after few minutes wash it to take out the starch as you put back in the pot.

Take a pan and add olive oil to nicely fry the onion, peppers and mushrooms then add sugar, parsley and bbq spice to fry until well done.

In the rice pot add Spice for rice and parsley leave it to cook wait for water to go down . When completely out of water add the vegetables and mix until all is done. (If you love corn,can add can of corn )

After mixing well leave it to cool off then add freshly squeezed lemon in the pot and mix well. Garnish with origanum and parsley

Can serve with anything or alone

Creamy Samp and Chicken Stew

Creamy Samp and Chicken Stew

Ingredients for Samp

⁃ Samp

⁃ Cheese (slices)

⁃ Powder milk

⁃ Fresh milk

⁃ Green, red and yellow pepper ( diced)

⁃ Parsley

⁃ Aromat

PREPARATION

Boil samp for 2 hours then wash it , this is to help get the starch out. Then boil for an hour until soft and water is finished then add aromat and a cup Fresh milk leave it for 10 – 15 minutes before stirring then add Finely diced peppers into the samp then stir leave them 5 minutes then add 3 slices of cheese depending on how much you like cheese. Allow it to melt then stir after 3-5 minutes add powder milk and leave it until everything is well mixed. To finish off add parsley and stir

Heat should be on medium throughout to avoid milk burning

Diced carrots

Chopped onions

Green beans

Green peas

Diced potatoes

Chicken spice

Herbs

Sugar

Salt

Mild and spice Rajah

Chicken spice

Hot sauce

Chicken Soup

Parsley

PREPARATION

Cook the chicken for about 30 until well done add Chicken spice, salt and rajah. Then remove the chicken from the pot and add potatoes, carrots, green beans, green peas and onions leave then to cook then put the chicken back in the pot and leave it to finely cook with the veggies

Add chicken soup and stir until finely cooked. Add the hot Sauce for the peri peri taste or can add chutney or any sauce.

Then garnish with Herbs and Parsley.

Serve both as a meal

Creamy Chicken Livers

Creamy Chicken Livers

INGREDIENTS

250G Chicken Livers.

1 tsp. Salt.

1 onion

Diced Green pepper, red pepper and yellow pepper.

Can of chopped/Diced tomatoes.

Olive oil.

Parsley.

Salt

Black/white pepper

2 tsp Rajah (Curry powder : mild and spicy)

1 tbsp sugar

Minestrone with Herbs soup

PREPARATION

  • Heat olive oil with diced onions
  • Wash the livers and add them into the pan
  • Add pinch of salt to the livers leave it to cook for 5 minutes
  • Stir with Fork, add Rajah
  • Add diced Peppers in the pan together with sugar
  • leave it to cook for 5 minutes
  • Add diced tomatoes or paste and stir until well done
  • Leave it to simmer for 5-10 minutes
  • Add black/ white pepper just a spoon
  • Leave it for 2 minutes
  • Mix minestrone soup with water and add into the pan
  • Leave it for another 2 minutes until well done.
  • Dish out and garnish with Parsley.
