
INGREDIENTS
⁃ two cups of spekko rice
⁃ Spice for rice
⁃ Parsley
⁃ Diced Green, red and yellow pepper
⁃ Mushrooms (chopped)
⁃ Origanum
⁃ BBQ spice
⁃ Brown sugar
⁃ Onions
⁃ Lemon
PREPARATION
Boil the rice under normal heat after few minutes wash it to take out the starch as you put back in the pot.
Take a pan and add olive oil to nicely fry the onion, peppers and mushrooms then add sugar, parsley and bbq spice to fry until well done.
In the rice pot add Spice for rice and parsley leave it to cook wait for water to go down . When completely out of water add the vegetables and mix until all is done. (If you love corn,can add can of corn )
After mixing well leave it to cool off then add freshly squeezed lemon in the pot and mix well. Garnish with origanum and parsley
Can serve with anything or alone
